Map on the Go is what you need.  Download maps from your PC to your phone SD card with the embedded PC program.  You need a Windows PC (Windows 7, or Vista SP1, or XP SP3) with internet connection to download map files.

Record your route on the sd card while you take pictures.  When you get home, run the embedded pc program to geo tag your photos.  No Internet connection needed.  Take it for long vacation, a 1G sd card can record 45 million waypoints.
