400 Refreshing Punch Recipes (v. 1.0)

Here are the sample Recipes,

Yield 17 Servings

1 qt apple cider
1 qt pineapple juice
1/4 c sugar
2 sticks cinnamon
1/2 t whole allspice
1/2 t whole cloves
1/2 c lemon juice
1 bottle sauterne wine,(4/5-qt.)
5 sm apples
1 whole cloves

In a large pan, combine the first 6 ingredients. Simmer for 15  minutes. Add lemon juice and wine. Heat but do not boil. Pour into a large  punch bowl. Stud apples with cloves and float in punch bowl.

Here are some sample Recipes

Thyme’ For Biscuits

2 1/4 c Red Band all purpose flour
1 T sugar
3 t baking powder
3/8 t garlic salt
1/2 t basil,crushed
1 t thyme,crushed
1/2 c butter
1/3 c Parmesan cheese,Shredded
4 T dried tomatoes,drained and -snipped
1/4 c sour cream
1/2 c milk

Pour 3/4 cup boiling water over 10 pieces of dried tomatoes. Let sit  for minutes to dehydrate.
Stir together flour, sugar, baking powder, garlic salt, basil and thyme.  Using a pastry blender, cut in butter until mixture resembles coarse  crumbs. Stir in cheese and tomatoes. Make a well in the center of the  dry mixture. Add sour cream and milk all at once. Stir just until  moistened.

Turn dough out onto lightly floured board. Flour top and knead 2 or 3  times. Lightly roll out ¾ inch thick. Cut with biscuit cutter.

Place on ungreased baking dish. Bake at 425 degrees for 12-15 minutes  or until lightly brown.

Chocolate Velvet Cheesecake

1 c Vanilla Wafer Crumbs
1/2 c Chopped Pecans
3 tb Granulated Sugar
1/4 c Margarine, Melted
16 oz Cream Cheese, Softened
1/2 c Brown Sugar, Packed
2 ea Large Eggs
6 oz Semi-sweet Chips, Melted
3 tb Almond Flavored Liqueur
2 c Sour Cream
2 tb Granulated Sugar

Combine crumbs, pecans, granulated sugar and margarine; press onto bottom of 9-  inch springform pan. Bake at 325 degrees F., 10 minutes. Combine cream sheese  and brown sugar, mixing at medium speed on electric mixer until well blended. Add  eggs, one at a time, mixing well after each addition. Blend in chocolate and liqueur;  pour over crust. Bake at 325 degrees F., 35 minutes. Increase oven temperature to  425 degrees F. Combine sour cream and granulated sugar; carefully spread over  cheesecake. Bake at 425 degrees F. 10 minutes. Loosen cake from rim of pan; cool  before removing rim of pan. Chill. VARIATION: Substitute 2 Tablespoons milk and  1/4 teaspoon almond extract for almond flavored liqueur.

7.75 lbs mix of 66% malted wheat extract and 33% barley
1 lbs crystal malt (steeped, removed before boil)
1 lbs amber unhopped dry malt extract

Hops
1.5 oz Kent Goldings hops (5.6% alpha) (60 minute
.5 oz Kent Goldings (10 minute boil)
.5 oz Kent Goldings (5 minute boil)
.5 oz Kent Goldings (in strainer, pour wort through)

Other
.5 oz Irish moss (15 minute boil)
.75 oz Burton water salts

Yeast 2 packs Doric ale yeast (started 2 hours prior to brew)

Procedure My primary ferment started in 1 hour and was surprisingly vigorous for 36 hours. It finished in 48 hours. It has been fermenting slowly for 5 days and now has stopped blowing CO2 through the airlock at any noticeable rate (less than 1 bubble every 3–4 minutes) I took a hydrometer reading last night and it read 1.018. This seems high for a F.G. in comparison to my other beers of the same approximate S.G.
