In case of SMS backup to sdcard your messages are stored in a friendly way - separate text file per conversation.
In case of Gmail backup, each message becomes separate email. And since all messages with the same person have the same subject, they will be combined into conversations by Gmail (in case you enabled this function in your gmail settings).
