About the Author
Samuel Butler

Author, educated at Shrewsbury and Cambridge, wrote two satirical books, Erewhon (nowhere) [1872], and Erewhon Revisited [1901]. He translated the Iliad and Odyssey in prose, and mooted the theory that the latter was written by a woman. Other works were The Fair Haven, Life and Habit, The Way of all Flesh (a novel) [1903], etc., and some sonnets. He also wrote on the Sonnets of Shakespeare.

Samuel Butler was an iconoclastic Victorian author who published a variety of works, including the Utopian satire Erewhon and the posthumous novel The Way of All Flesh, his two best-known works, but also extending to examinations of Christian orthodoxy, substantive studies of evolutionary thought, studies of Italian art, and works of literary history and criticism. Butler also made prose translations of The Iliad and The Odyssey which remain in use to this day.

His influence on literature came through The Way of All Flesh, which Butler completed in the 1880s but left unpublished in order to protect his family. And yet the novel, “begun in 1870 and not touched after 1885, was so modern when it was published in 1903, that it may be said to have started a new school,” particularly in the use of psychoanalytical modes of thought in fiction.

When it comes to sous vide cooking, the most difficult thing to figure out is the time and temperature range to use for various foods. We have compiled a list of times and temperatures you can use as a reference guide for your cooking. We even give you a place to save your own notes as you try them out.

We offer over 400 sous vide time and temperature combinations across 175 cuts of meat and types of fish and vegetables. Conveniently broken up into 10 main categories for ease of use:
- Beef Roasts and Tough Cuts
- Beef Steaks and Tender Cuts
- Pork
- Chicken
- Duck
- Fish
- Shellfish
- Lamb
- Turkey
- Fruits and Vegetables

Each of these main categories has a lengthy description of how sous vide relates to that type of food and discusses both the time and temperature guidelines and the general process for cooking it. We then list the cuts of meat or types of food in that category and provide a short description of each item and one or more recommended time and temperature combinations.

Also included is a brief introduction to sous vide, a discussion of sous vide safety, links to more sous vide resources, and an overview of how to substitute sous vide food into your favorite traditional recipes.

While there are no recipes in this app, the best part about sous vide is how interchangeable it is with existing recipes. You can take many traditional recipes and follow them to the letter with the only exception being to replace the cooking of the meat with sous vide instead of baking, braising, pan-frying, sauteing, etc.

Take your favorite chili recipe and use turkey, beef, or chicken that was cooked sous vide. Make fajitas and instead of grilling the meat try cooking it sous vide. Sausage for pasta, roasted rack of lamb, steak for salad, fried chicken, and corned beef can all be cooked sous vide while keeping the same marinades, sauces, and sides as the traditional recipes call for.

About the Author
William Blake

Poet and painter, born in London, was from earliest youth a seer of visions and a dreamer of dreams, seeing “Ezekiel sitting under a green bough,” and “a tree full of angels at Peckham,” and such he remained to the end of his days. His teeming imagination sought expression both in verse and in drawing, and in his 14th year he was apprenticed to James Basire, an eminent engraver, and thereafter studied at the Royal Academy. Among his chief artistic works were illustrations for Young’s Night Thoughts, Blair’s Grave, “Spiritual Portraits,” and his finest work, “Inventions to the Book of Job,” all distinguished by originality and imagination. In literature his Songs of Innocence appeared in 1789, Songs of Experience in 1794. These books were literally made by Blake and his heaven-provided wife; poems and designs alike being engraved on copper by Blake and bound by Mrs. Blake. In like fashion were produced his mystical books, The Book of Thel [1789], The Marriage of Heaven and Hell [1790], The Gates of Paradise, Visions of the Daughters of Albion, Europe, The Book of Urizen [1794], The Book of Los and The Book of Ahania [1795]. His last books were Jerusalem and Milton. His earlier and shorter pieces, e.g. “The Chimney–Sweeper,” “Holy Thursday,” “The Lamb,” “The Sun-flower,” “The Tiger,” etc., have an exquisite simplicity arising from directness and intensity of feeling — sometimes tender, sometimes sublime — always individual. Latterly he lost himself in clouds of mysticism. A truly pious and loving soul, neglected and misunderstood by the world, but appreciated by an elect few, he led a cheerful and contented life of poverty illumined by visions and celestial inspirations.

This classic adventure story, set in early twentieth-century Britain, features the lovable characters Rat, Toad, Mole, and Badger. Narrator Shelly Frasier's clear, pleasant voice carefully distinguishes these four creatures, and it's easy to keep their identities straight, though her throaty characterization of Ratty's voice occasionally makes one want to cough. However, Frasier must constantly switch from her native American accent to the British voices of her characters, which is somewhat distracting at first, though one gets used to it as the story moves along. The naughty toad is her best creation--she seems to understand his dreamy but destructive love of motor cars completely.
