《初刻拍案惊奇》是明朝末年凌濛初编著的拟话本小说集。成书于明朝天启七年(1627)，第二年由尚友堂书坊刊行问世。其后凌濛初又编著《二刻拍案惊奇》，于明朝崇祯五年(1632)刊行。二书合称“二拍”。《初刻拍案惊奇》本为四十卷四十篇，原本已失，今所见最早且最为完整的本子是藏于日本内阁文库的尚友堂刻本，全书存三十九卷(缺二十三卷)，即实有小说39篇。

Formerly it was the custom for gardeners  to invest their labors and achievements  with a mystery and secrecy which might  well have discouraged any amateur from  trespassing upon such difficult ground.  "Trade secrets" in either flower or  vegetable growing were acquired by the  apprentice only through practice and  observation, and in turn jealously  guarded by him until passed on to some  younger brother in the profession.

Every garden operation was made to seem a wonderful and difficult  undertaking. Now, all that has changed. In fact the pendulum has swung,  as it usually does, to the other extreme. Often, if you are a beginner, you  have been flatteringly told in print that you could from the beginning  do just as well as the experienced gardener.

My garden friend, it cannot, as a usual thing, be done. Of course, it  may happen and sometimes does. You might, being a trusting lamb,  go down into Wall Street with $10,000 and make a fortune. You know that  you would not be likely to; the chances are very much against you. This  garden business is a matter of common sense; and the man, or the woman,  who has learned by experience how to do something, whether it is  cornering the market or growing cabbages, naturally does it better than  the one who has not. Do not expect the impossible. No, if you are going  to take up gardening, you will have to work, and you will have a great many  disappointments. All that I, or anyone else, could put between the two  covers of a book will not make a gardener of you. It must be learned through  the fingers, and back, too, as well as from the printed page. But, after all,  the greatest reward for your efforts will be the work itself; and unless  you love the work, or have a feeling that you will love it, probably  the best way for you, is to stick to the grocery for your vegetables.

Yield: 4 Servings

1 T oregano
2 T paprika
2 T msg (monosodium glutamate)
9 T chili powder,light
4 T cumin
4 T beef bouillon
1 (instant,crushed)
24 oz old milwaukee beer
2 c water
4 lb chuck,Extra Lean
1 chili grind
2 lb pork,Extra Lean
1 chili grind
1 lb chuck,Extra Lean
1 cut into 1/4 cubes
2 large onions,finely chopped
10 cloves garlic
1 finely,Chopped
1/2 c wesson oil (or kidney suet)
1 t mole (powdered)
1 also called mole poblano
1 T sugar
1 t coriander seed (from chinese
1 parsley,cilantro)
1 t louisiana red hot sauce
1 (durkee’s)
8 oz tomato sauce
1 T masa harina flour
1 salt,To Taste

In a large pot, add paprika, oregano, MSG, chili powder, cumin, beef  bouillon, beer and 2 cups water. Let simmer.

In a separate skillet, brown meat in 1 lb. or 1 1/2 lb. batches with  Wesson oil or suet. Drain and add to simmering spices. Continue  until all meat is done.

ALMOND CHICKEN

1 lb skinned chicken breast.  
1/3 Slivered almonds  
5 slices fresh ginger root  
3 green onions,
chopped to about 1" lengths  
1 green pepper, chopped as above  
1/2 cup diced bamboo shoots  
1 cup vegtable oil

~~Marinade~~

1/4 tsp salt
1/8 tsp white pepper
1 tsp cornstarch
1 Tbsp soy sauce
1 egg white

~~Seasoning sauce~~

1 Tbsp rice vinegar
2 Tbsp soy sauce
1 Tbsp dry sherry
1/2 tsp salt
1 tsp sugar
1/2 tsp cornstarch

Cut chicken into 1” cubes. Combine marinade ingredients, add chicken and mix well. Let stand 1/2 hour.

Heat oil in wok, add chicken and stir-fry until browned. Remove chicken and drain well. Stir-fry ginger, onion, pepper and bamboo shoots for about 1 minute until vegtables are crisp-tender. Combine ingrediants for seasoning sauce in a small bowl, mix well and add to wok. bring to boil. Add chicken to boiling sauce. Stir-fry chicken until coated with sauce. Add almonds, mix well and serve hot. Serves 4

As the three chief foundation sauces in cookery, Espagnole or brown  sauce, Velute or white sauce, and Bechamel, are alluded to so often  in these pages, it will be well to give simple Italian recipes for  them.

Australian wines may be used in all recipes where wine is  mentioned: Harvest Burgundy for red, and Chasselas for Chablis.

The chief ingredient of this useful sauce is good stock, to which  add any remnants and bones of fowl or game. Butter the bottom of a  stewpan with at least two ounces of butter, and in it put slices of  lean veal, ham, bacon, cuttings of beef, fowl, or game trimmings,  three peppercorns, mushroom trimmings, a tomato, a carrot and a  turnip cut up, an onion stuck with two cloves,

ALMOND PUDDING -1

Take one pound of almonds, blanch'd and beat fine, one pint of cream,  the yolks of twelve eggs, two ounces of grated bread, half a pound of  suet, marrow, or melted butter, three quarters of a pound of fine  sugar, a little lemon-peel and cinnamon; bake it in a slow oven, in a  dish, or little tins. The above are very good put in skins.


ALMOND PUDDING -2

4 eggs, 3 oz. of castor sugar, 4 oz. of ground sweet almonds, 1/2 oz.  of ground bitter almonds. Whip the whites of the eggs to a stiff  froth, mix them lightly with the well-beaten yolks, add the other  ingredients gradually. Have ready a well-buttered pie-dish, pour the  mixture in (not filling the dish more than three-quarters full), and  bake in a moderately hot oven until a knitting needle pushed through  comes out clean. Turn the pudding out and serve cold.

1 lb. hot sausage
1 lb. lean ground beef
1 lb. Velveeta cheese
1 tbsp. Worcestershire sauce
Salt and pepper
3 loaves cocktail rye slices

Fry sausage with beef. Drain drippings. Add cheese, oregano, Worcestershire sauce. Salt and pepper to taste. Stir until cheese meets. Spread on rye slices. Freeze on cookie
