1 T oregano
2 T paprika
2 T msg (monosodium glutamate)
9 T chili powder,light
4 T cumin
4 T beef bouillon
1 (instant,crushed)
24 oz old milwaukee beer
2 c water
4 lb chuck,Extra Lean
1 chili grind
2 lb pork,Extra Lean
1 chili grind
1 lb chuck,Extra Lean
1 cut into 1/4 cubes
2 large onions,finely chopped
10 cloves garlic
1 finely,Chopped
1/2 c wesson oil (or kidney suet)
1 t mole (powdered)
1 also called mole poblano
1 T sugar
1 t coriander seed (from chinese
1 parsley,cilantro)
1 t louisiana red hot sauce
1 (durkee’s)
8 oz tomato sauce
1 T masa harina flour
1 salt,To Taste

In a large pot, add paprika, oregano, MSG, chili powder, cumin, beef  bouillon, beer and 2 cups water. Let simmer.

In a separate skillet, brown meat in 1 lb. or 1 1/2 lb. batches with  Wesson oil or suet. Drain and add to simmering spices. Continue  until all meat is done.

ALMOND CHICKEN

1 lb skinned chicken breast.  
1/3 Slivered almonds  
5 slices fresh ginger root  
3 green onions,
chopped to about 1" lengths  
1 green pepper, chopped as above  
1/2 cup diced bamboo shoots  
1 cup vegtable oil

~~Marinade~~

1/4 tsp salt
1/8 tsp white pepper
1 tsp cornstarch
1 Tbsp soy sauce
1 egg white

~~Seasoning sauce~~

1 Tbsp rice vinegar
2 Tbsp soy sauce
1 Tbsp dry sherry
1/2 tsp salt
1 tsp sugar
1/2 tsp cornstarch

Cut chicken into 1” cubes. Combine marinade ingredients, add chicken and mix well. Let stand 1/2 hour.

Heat oil in wok, add chicken and stir-fry until browned. Remove chicken and drain well. Stir-fry ginger, onion, pepper and bamboo shoots for about 1 minute until vegtables are crisp-tender. Combine ingrediants for seasoning sauce in a small bowl, mix well and add to wok. bring to boil. Add chicken to boiling sauce. Stir-fry chicken until coated with sauce. Add almonds, mix well and serve hot. Serves 4

ALMOND PUDDING -1

Take one pound of almonds, blanch'd and beat fine, one pint of cream,  the yolks of twelve eggs, two ounces of grated bread, half a pound of  suet, marrow, or melted butter, three quarters of a pound of fine  sugar, a little lemon-peel and cinnamon; bake it in a slow oven, in a  dish, or little tins. The above are very good put in skins.


ALMOND PUDDING -2

4 eggs, 3 oz. of castor sugar, 4 oz. of ground sweet almonds, 1/2 oz.  of ground bitter almonds. Whip the whites of the eggs to a stiff  froth, mix them lightly with the well-beaten yolks, add the other  ingredients gradually. Have ready a well-buttered pie-dish, pour the  mixture in (not filling the dish more than three-quarters full), and  bake in a moderately hot oven until a knitting needle pushed through  comes out clean. Turn the pudding out and serve cold.

FISH provides another class of high-protein or tissue-building food. The preservation methods that have proved to be the most satisfactory are canning, salting and drying, smoking and preserving in various kinds of brine and pickle. As such methods are usually carried out in the locality where the fish is caught, many varieties of fish can be conveniently stored for long periods of time and so distributed as to meet the requirements of the consumer. This plan enables persons far removed from the Source of supply to procure fish frequently.

Amish Bread Starter

2/3 c. sugar
2/3 c. milk
2/3 c. flour
2/3 c. oil
3 eggs
1/2 tsp. salt
1/2 tsp. vanilla
1 to 1 1/2 tsp. cinnamon
1 c. sugar
2 c. flour
1 1/4 tsp. baking powder
1 tsp. baking soda

Combine ingredients in large airtight container with lid. Store at room  temperature, do not refrigerate. Stir every day for 17 days. The recipe makes  more than the 1 cup needed. But allows for evaporation. Now the starter is  ready. For the next 10 days handle starter according to the following  instructions. Day 1, receive the starter Day 2, 3 & 4 - stir Day 5, Add 1 cup  each flour, sugar and milk. Day 6 & 7, stir Day 8 & 9, stir Day 10, Add 1  cup flour, sugar and milk. Divide into 3 containers of 1 cup each for friends.  After removing the 3 cups of batter, mix in the following ingredients: Using  a fork, beat by hand until well blended. Add 1 cup raisins and 1 cup nuts  (optional).  Grease pans with butter, sprinkle with sugar instead of flour. Bake at 325  for 1 hour. Cool 10 minutes, remove from pans.

1 qt apple cider
1 qt pineapple juice
1/4 c sugar
2 sticks cinnamon
1/2 t whole allspice
1/2 t whole cloves
1/2 c lemon juice
1 bottle sauterne wine,(4/5-qt.)
5 sm apples
1 whole cloves

In a large pan, combine the first 6 ingredients. Simmer for 15  minutes. Add lemon juice and wine. Heat but do not boil. Pour into a large  punch bowl. Stud apples with cloves and float in punch bowl.

Thyme’ For Biscuits

2 1/4 c Red Band all purpose flour
1 T sugar
3 t baking powder
3/8 t garlic salt
1/2 t basil,crushed
1 t thyme,crushed
1/2 c butter
1/3 c Parmesan cheese,Shredded
4 T dried tomatoes,drained and -snipped
1/4 c sour cream
1/2 c milk

Pour 3/4 cup boiling water over 10 pieces of dried tomatoes. Let sit  for minutes to dehydrate.
Stir together flour, sugar, baking powder, garlic salt, basil and thyme.  Using a pastry blender, cut in butter until mixture resembles coarse  crumbs. Stir in cheese and tomatoes. Make a well in the center of the  dry mixture. Add sour cream and milk all at once. Stir just until  moistened.

Turn dough out onto lightly floured board. Flour top and knead 2 or 3  times. Lightly roll out ¾ inch thick. Cut with biscuit cutter.

Place on ungreased baking dish. Bake at 425 degrees for 12-15 minutes  or until lightly brown.
